Hello! It’s been a while. Had a kid, some issues after delivery, loved every minute of maternity leave, returned to work and still busy as ever adjusting to new mommyhood! I still have mommy brain but am starting to feel much more like myself and it is good to be back.
Stephen and I have challenged one another to not eat out at all during the month of March. We have some aggressive financial plans going on and are trying to improve ourselves and meet some new goals. Part of this challenge is financial based, not that we go crazy but all the little things really eat up and I am a nerd tracking all of our spending and making charts and graphs and I hate what I am seeing when other things could be done with that money – more on that another day. But another thing is the food isn’t usually healthy and more often than not it doesn’t even taste good so why waste the money!
I imagine the hardest parts of this for me will be when I come home from work exhausted, I really have to figure out something for dinner and just deal with it. Easier meals and quick fix stuff in our plan will hopefully help. Also, I have a hard time taking a break at work so when I leave the building to grab something I actually take a break – which I find makes me a better employee. Now I just really have to force myself to take a break and find some place to do that at work. So far 7 days into this, it hasn’t been too bad.
Except with the coffee I had been enjoying a few times a week. I have a few iced drinks from Beans & Brews that I just love and while I don’t think I could ever recreate those, I have found something that curbs that craving and keeps some extra $$$ in my pocket! Plus it is really quite simple.
I have seen some tutorials for these where you don’t brew the coffee, you let it soak and then drain the coffee with cheese cloth, etc. I have tried it and it is a pain and honestly this tastes the same to me so why not make it easier on myself?
I just brew my favorite coffee in a big batch. Pour it in a plastic pitcher and put it in the fridge. Doing this with hot coffee over ice just does not work – it melts the ice too fast and becomes water and yucky!
Start with your favorite cup. (This is pretty big but I just love the clear cups with the big straws!)
Fill it almost the whole way with ice.
Pour a little caramel and let it drizzle down.
Pour a little milk (to your liking)
Not groundbreaking but I have tried so many different ways to do this and have been disappointed.
