This year for coworker and neighbor gifts, we are giving my favorite pancakes ever! We used to only buy mixes but one day we ran out and found a recipe online that we have altered to our own personal perfection! We have never looked back, no mix compares! So why not jar it up and share it?
I made the labels on my silhouette, of course. I picked up the 16oz mason jars from Walmart.

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
In a large bowl, sift together all of the ingredients, 2-3 times. This is a very important step, the sifting helps the pancakes to be much more fluffy! Sifting always reminds me of my Grandma Nan making wheat pancakes for us when we slept over, I can still remember the smell to this day! Such great memories!
Anyway, it is super easy, it makes just about 2 cups worth of mix which fits perfectly in the 16 oz jars. Be sure to clean the jars well before filling them. We just grabbed our biggest bowl and made a ton of the mix – just be careful to accurately calculate the amount you need for multiple mixes.
