This One-Pan Sausage and Veggie Rosa Pasta dish is packed with a creamy tomato sauce, lots of veggies and smoked sausage. It’s fantastic.
It’s pretty easy to put together, which is always a plus in my book. And one pan? I don’t usually do the dishes around here, my husband has always been good about that but I know he appreciates when I can keep the clean up to a minimum.
In a large pan, melt the butter on medium-high heat. Add in the sausage, onion and garlic. Cook for 4-5 minutes until the sausage is browned a little. Add in veggies, liquids and pasta.
Mix and heat to a boil. Reduce heat to medium-low and cover. Stir a couple of times while cooking. Cook for about 15 minutes until the noodles are done. Remove from heat. Taste and add in salt and pepper as needed. Stir in cheese.

Ingredients
- 1 tbsp butter
- 8 oz smoked sausage, sliced into 1/4" pieces
- 1 cup onion, diced
- 2 tsp minced garlic
- 4 roma tomatoes, diced
- 1 cup celery, diced
- 1 cup carrots, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 12 oz pasta, I prefer bowtie for this dish
- Salt & Pepper, to taste
- 1 1/2 cup shredded Colby & Monterey Jack cheese
Instructions

- Remove from heat. Taste and add in salt and pepper as needed.
- Stir in cheese.
- Dish it up and enjoy.
