Homemade Real Fruit – Tiger’s Blood Snow Cone Syrup

Tiger’s blood is my favorite syrup for snow cones. It is strawberry and coconut. I have been testing out a few different syrup options trying to find the right sweetness (but not too sweet) and right thickness without being too runny. They have all tasted good but I have finally found the one I LOVE!! Also, I was really appalled at the amount of sugar that went into syrup and one of the greatest things about making things at home is you can control what goes into it.

Grilled Chicken and Quinoa Stuffed Peppers

The other day I was talking to a friend about some vegetarian stuffed peppers she made. I couldn’t stop thinking about them and started coming up with all sorts of combinations to try out. I had never made stuffed peppers but love things that I can individualize easily since Stephen has much more plain tastes then I do.

These turned out awesome and even got a great review from Stephen.

We stuffed these with shredded grilled chicken, quinoa, cherry tomatoes, kalamata olives and feta cheese and topped with provolone cheese! Yum Yum Yum!!! This makes 6 stuffed peppers.

Our new small backyard landscaping

I am so excited about our new backyard. This place has been a point of shame and just plain gross most of our time living in our home. I will be very honest with you, our backyard has been mostly just a dog poop haven. Sometimes it has been so bad that I haven’t even wanted to open the windows. We used to have dogs on both sides of us (we are in a town home) and the ones that have left were big dogs. The combination of that is bound to leave some lovely aromas floating around, no matter how often it is cleaned up. This is an area I have mostly avoided but it was on my list to fix this year and I am loving how it turned out. [Read more…]

Foil Grilled Corn on the Cob

It is grilling season and we are finding ourselves throwing everything on the grill – and I love it! I usually knew corn as boiled and then a few summers ago I set out to find a better way and this is the most flavorful, juicy, and delicious I have found! I have tried grilling corn in the husk and while that does okay – I usually end up using a lot more butter on it and the flavor just isn’t the same to me. This resolved all of that for me!

Fiesta Lime Open Faced Shrimp Quesadilla

Oh man, these things are so tasty! I love them. I am not a big shrimp fan but Stephen loves shrimp and all seafood for that matter but not sushi. Anyway, I try to incorporate it into our meals when I can tolerate it 🙂

My first Mother’s day

This year was my first Mother’s day. Stephen told me he had something planned but wouldn’t tell me what it was. He made me breakfast, french toast with Great Harvest Cinnamon Burst bread. Then Reece and I took a nap – yep right after breakfast! We then got ready and headed to the car. Stephen told me to bring my camera and he took me to Utah Lake, which is about 20 minutes from our house. I had never been there and had mentioned that a couple of weeks before and how I wanted to check it out for photography spots. What a sweet guy to remember that. He looked up where to go and things to do in that area and planned it out. We walked around and snapped some photos – what a gorgeous place! I forget sometimes how much beauty surrounds me in this state but sometimes it takes my breath away!

Homemade Iced Latte

Hello! It’s been a while. Had a kid, some issues after delivery, loved every minute of maternity leave, returned to work and still busy as ever adjusting to new mommyhood! I still have mommy brain but am starting to feel much more like myself and it is good to be back.

Stephen and I have challenged one another to not eat out at all during the month of March. We have some aggressive financial plans going on and are trying to improve ourselves and meet some new goals. Part of this challenge is financial based, not that we go crazy but all the little things really eat up and I am a nerd tracking all of our spending and making charts and graphs and I hate what I am seeing when other things could be done with that money – more on that another day. But another thing is the food isn’t usually healthy and more often than not it doesn’t even taste good so why waste the money! [Read more…]

Introducing Reece Thunder Reed

We have been a little busy around here, soaking up all the amazingness that is our beautiful, perfect in every way little boy! Motherhood has been amazing so far and I feel so very blessed at this time in our lives! I wanted to get these when he was super sleepy and very brand new but had some recovery hiccups that needed to be dealt with first and wasn’t feeling well enough to do this until the middle of his second week. He has already started to change so much! I am thrilled to share these!
