It is grilling season and we are finding ourselves throwing everything on the grill – and I love it! I usually knew corn as boiled and then a few summers ago I set out to find a better way and this is the most flavorful, juicy, and delicious I have found! I have tried grilling corn in the husk and while that does okay – I usually end up using a lot more butter on it and the flavor just isn’t the same to me. This resolved all of that for me!
All you need is corn, butter, foil and seasonings (I prefer salt & pepper)!
Take some foil that will wrap around the cob and rub on a very thin layer of butter. Be sure to get it up to one of the side edges and you only need to go in far enough to wrap the cob so yummy butter is touching the cob but not overloaded!
Then sprinkle on some seasoning. I love it simple with just salt & pepper but it you could try all sorts of combinations, herbs, etc.
Put the cob on the edge of the foil and roll it in.
Cover the edges with foil and get them ready to take them to the grill.
Put the corn on the grill on the top rack on medium heat. Cook them for 15 minutes and then turn them to the other side and do another 15 minutes. Crack open the foil and see the awesome steam and smell the greatness you are about to feast on!
Now if you are a regular person and can eat the corn off the cob – now is the time to dig in. But if you are like me – and had a “dodgeball incident” in the 4th grade and now have a fake bridge of front teeth and can’t have corn on the cob (or caramel apples, etc.) – then I have the solution for you so you don’t miss out on this delicious flavor!
There are all sorts of corn devices out there. We got this for our wedding (almost 5 years ago – eek!) and it is fantastic. Here it is on Amazon. I hate to admit it but we hardly used it the first few years because we didn’t realize how great it was! All you do is run it over the sides of the cob and it collects in top. It also has a measuring line so you can see how much you have if you are interested in that!.
When the cob is uncovered, just turn it over and pour out the fake teeth friendly corn. Stephen used to take a fork and knife and cut off the corn for me – it was sweet. He still usually does this for me but this device makes it so much faster and easier!
