
Oh man, these things are so tasty! I love them. I am not a big shrimp fan but Stephen loves shrimp and all seafood for that matter but not sushi. Anyway, I try to incorporate it into our meals when I can tolerate it 🙂
When I cook I am either a follow the recipe exactly type of person or a see something online and feel inspired and throw things in based on that inspiration. I saw a shrimp avocado dish and thought I could make something with that, this was a toss stuff in type of meal and the result was scrumptious!
I am a little squeamish when it comes to seafood. I just don’t know how to approach it and sometimes it is looking back at you and it freaks me out! I have never used fresh raw shrimp – it is the squeamishness and the fact that I live in a desert and don’t really trust that it could ever be that fresh here! I always buy the frozen precooked and deveined shrimp bags. They work great but you could use whatever you like or even chicken! You just thaw the shrimp out in cold running water and then be sure to remove the tails after – it’s easy they just pop off and if I can do it, I know you can.
Let them drain.
While the shrimp is thawing, get the rest of your stuff ready. Tortillas – Costco has these fresh refrigerated tortillas that you throw in a pan for like 60 seconds when you want fresh tortillas – they were perfect for this but any tortilla you like will work!
Cut up some veggies – whatever you like on quesadillas or tacos. The shrimp and avocado combination was fantastic so it is a must! I added tomatoes and canned sliced olives.
This seasoning is so great. It is one of my favorites in the summer time!
Once the shrimp are thawed, toss them in a pan and sprinkle on some of that flavorful seasoning. If you are using fresh shrimp you can add it in while cooking it!
Then clear out your pan and throw one of those tortillas in. Arrange with shrimp and some cheese – I used feta and a little bit of mozzarella but if you want more of a melty quesadilla-y texture I would use a different kind. Let it warm everything together for a minute.
Then put it on a plate and top of with whatever other toppings you fancy! This was super delicious and filling. Again, this could be good with other meats like chicken, steak or even vegetarian style – just be sure to get that fiesta flavor in their somewhere maybe saute some veggies with it?!? Enjoy!
Fiesta Lime Open Faced Shrimp Quesadilla
Ingredients
- Shrimp (cooked)
- Tortillas
- Tomatoes
- Cheese
- Avocados
- Fiesta Lime seasoning
Instructions
- Prepare shrimp, tortillas and any toppings you choose.
- Once the shrimp are ready (cooked or thawed), toss them in a pan on medium heat and sprinkle on some of the seasoning, heat 2-3 minutes. If you are using fresh shrimp you can add it in while cooking.
- Clear out your pan and throw one of the tortillas, until warm. Arrange with shrimp and some cheese - I used feta and a little bit of mozzarella but if you want more of a melty quesadilla-y texture I would use a different kind. Let it warm everything together for a minute.
- Put tortillas on a plate and top with anything additional.
