This is a super quick, cheap and delicious meal. Using the grill makes it so much more flavorful, it tastes a lot like pizza cooked in a brick oven. One thing to keep in mind is that it isn’t always pretty, throwing dough on the hot grill gets a little sticky and sometimes isn’t perfect but it all tastes the same.
First, fire up the grill and let it heat up on medium. While that is warming up, get all of your toppings ready. We have done many different combinations and pretty much anything you like on a pizza will work. With this one we just did sauce, tomatoes, pepperoni and pineapple. You always want to use olive oil on the dough so make sure to have that on hand. You will have to work quick so if you can have things open and in containers, the more convenient the better.
After the toppings are ready to go, work on your dough. I am not great with dough making yet so I buy my dough. My favorite is from Winco. Roll it out on a greased cookie sheet. I make it into a square – but remember things don’t always work out perfectly on the grill so I don’t worry too much about the shape. After it is rolled out, brush on some olive oil.
Take it out to the grill and throw it on with the oil side down. Close the lid and let it cook for about 2 minutes. Meanwhile, get all the toppings out to the grill and get ready to work fast!
After it has cooked, brush some olive oil on and flip the crust. It will be much easier to work with after those 2 minutes!
Quickly brush on some pizza sauce.
Sprinkle the cheese.
Add all of your toppings and close the lid. Let it cook about 6 minutes. Use some tongs and gently check the bottom to check for any darkening. Be sure to check both sides – I only did one and you can see the results below.
This is looking good.
This is not so great! When it starts to get really golden, it is about time to take it off before it turns to this!
Enjoy!
